Hi. Im not a roofer. Im a client. Im here for profesional advice.
Today a roofer came to install 3 attic vents in my house and I have concrete tiles and I know nothing about installations but something did not look right on the way it was installed. Please see pictures, from what I see on the internet the vent needs to be "interlocked" with the tiles but these guys just installed directly on the drywall and when they finished the tile now sits on top of the flashing but of course there are gaps... is it ok if water goes under the tiles?

It is good if the ventilation prevents water from falling down. You should check if it covers the roof and there are no holes in it. Otherwise you will have a lot of problems when it starts leaking. I may not be the best customer, but I have been there often. I watched them do it and asked questions all the time. I kept checking the quality of their work to be sure. The work was flawless. So you can.also ask the employees about it!
